Zucchini Chocolate Cake

Would you believe this cake is make out of zucchini?!? A woman in my ward (church) has a wonderful baking blog called: Baking and Boys and it is awesome. I have been wondering what to do with the huge zucchini I have growing in my garden and she has (mercifully) put up several recipes of what you can make with zucchini along with a zillion other wonderful recipes. Check her out!

  2. I LOVE zucchini cake. I also have a fabulous recipe for zucchini bread. I’ll get you the recipes in the next couple of days if you want.

    • Mmmm! I would totally love a recipe for zucchini bread. I’m going to be baking up a storm with the foot and a half long zucchini growing in my garden!

  3. Here is the recipe for the bread. I still need to look up the cake.

    Zucchini Coconut Bread
    3 Eggs
    3/4 C. Oil
    1 1/2 C. Sugar

    1 tsp. Vanilla
    2 C. Grated zucchini

    2 1/3 C. Flour
    1/4 tsp. Soda
    1/4 tsp. Baking powder
    1 tsp. Salt
    1 sm. Pkg. Pistachio pudding
    1 C. Coconut (optional)

    Beat together eggs, oil, and sugar. Add the vanilla and zucchini. Mix all dry ingredients together and add to the other mixture. Pour into 2 greased bread pans.
    Bake at 350 for 45-50 minutes.

    Coconut Glaze

    1/2 C. Sugar
    1/4 C. Water
    1 T. Butter or margarine
    1/2 tsp. Coconut extract

    Bring sugar, water, and butter to a boil for 2 minutes. Remove from heat and add extract. Pour over warm bread and let it cool completely before removing from pans.

  5. Here’s my recipe for zucchini cake. I like it because it is so moist and sweet and it doesn’t need frosting so it’s not overly sweet. Knowing it’s loaded with veggies too makes me feel better about eating it!

    1/2 cup margarine
    1/2 cup oil
    1 1/3 cup sugar
    2 eggs
    1/2 sour cream
    1 tsp vanilla
    2 1/2 cup flour
    4 TB cocoa
    1/2 tsp salt
    1/2 tsp baking powder
    1/2 tsp soda
    2 cups shredded zucchini
    Chocolate chips on top

    Put in a greased and floured 9 x 13 pan. Sprinkle with chocolate chips. Bake at 325 degrees for 50-60 minutes. Let cool and sprinkle with powdered sugar.
