Very Vegetable Shepard’s Pie

I know that Shepard’s Pie is also known as “Meat Pie” and generally doesn’t have much if any vegetables in it. But why cook a meat pie and then have to cook vegetables on the side to serve with it anyway? Just put it all together!

*Serves four hungry people.

Ingredients:

Small can Green Beans
Small can Corn
1/2 lb lean hamburger meat
Zucchini to taste (I put about 3/4 c)
1 can Tomato Soup
2 medium/large potatoes (3 if they are medium/small)

Directions:

-Heat oven to 350 degrees
-Start water boiling for potatoes.
-dice potatoes and put in boiling water until you can stick a fork in them.
-Brown hamburger meat. Season with onions, garlic and parsley.
-Dice up zucchini (or thaw from freezer)
-Strain ground meat and put in 8×12 casserole dish
-add drained green beans and corn.
-add diced zucchini and mix in tomato soup.

Meat and Vegetables

-mash potatoes in pot, add milk, butter and salt and pepper to taste.
-spoon mashed potatoes onto meat/vegetable mixture.
-bake in oven at 350 for 25 minutes or until bubbly.
