So my husband said if I wrote this recipe down I would get a massage, perhaps that says how good it is, perhaps he’s trying to look like a guy who gives his wife massages a lot when deep down he thinks he wont have to because he thinks I wont actually write down the recipe? That was long… moving on.
I made up this recipe last night and it was yummy and really simple.
2 Chicken Breasts
2 cups water
2 chicken bouillon cubes
1 head of cooked broccoli cut up
2 hand fulls of spinach, diced
about 1 cup diced carrots
1 cup corn
3 T minced onion
1 t garlic
all seasoning salt to taste
rice (I did 1 c brown minute rice and 2 c white rice)
1. Put water and bouillon cubes in a large pan, bring to a boil. In another pan make your rice. (If you don’t already have cooked broccoli then you can cook it now. Cut up broccoli and bring it to a boil. Boil for 8 minutes or until you can stick a fork through it, drain immediately.)
2. Add chicken, minced onion, garlic and seasoning, cover and simmer about 10 minutes.
3. Turn chicken over, add carrots, corn and broccoli.
4. Cook for another 10 minutes or until chicken is cooked through. Serve over rice.
I had frozen chicken so I did cut it into strips after the first 10 minutes. If you really want to shorten cooking time I would have thawed, cut up chicken to start with and add the vegetables right away. This would shorten your cooking time from 20 minutes to about 10.
